The catering department is required to provide meals 3 times daily, for the resident 625 prisoners. A choice of 5 hot & cold choices, being available, at both, Lunch & Dinner meals.
The menu rotates on a 4 weekly cycle and is seasonally adjusted to suit the climate
It is built in mind to providing a balanced & nutritious diet for all offenders, taking into account the ethnic and age demography of the establishment. Specific medical diets are provided as requested, and under the supervision of the Medical Centre.
All prisoner who work in the kitchens receive full training, attaining their Level 1 qualifications in Food Safety & Health & Safety with the first week, with food handlers sitting their Level 2 Food Safety qualification within 8 weeks of starting,
Dedicated Vocational qualifications are also available, with NVQ courses taking place in ‘Food Preparation & Hospitality’ Levels 1 & 2. Training taking place in the dedicated training kitchen at Rye Hill,
The training kitchen also provides a breakfast and lunch service for prison staff. Include are items on the menu, that incorporate elements made by prisoners undertaking NVQ training. A New Take Away service has also been introduced to allow staff, otherwise engaged, to have the opportunity to have a hot meal.
